This taco represents what StreetZlan is all about. When I first created this taco, I thought about everything that defined me as a chef, what represented me and what was my objective all along. We are still working on perfecting this taco during the busy rush hour, this taco can be very challenging to execute perfectly. From the temperatures of the meat and tortilla to the plating and glazing factor of the burnt end itself. Not to mention the other 100 things we got going on at the same time.
